Brighten up your day with a deliciously satisfying Pumpkin Pie Smoothie!

Okay, this is the easy version …. the version you can purchase on  the way home today.

(I will be posting the purist’s, home made version soon.)

I made this last night for a dinner party, I didn’t really want to do a big dessert, something simple. It was ridiculous.

So I had it again today!

Ingredients:

Organic Pumpkin Pie mix (I used farmer’s market foods brand) 1 can

Organic Coconut milk 1/2 can

A little bit of Organic Coconut water – to thin it out

Cinnamon

Directions:

  1. Put the pie mix and coconut milk in a blender
  2. Blend
  3. Add in coconut water in moderate amounts to thin it out
  4. Blend again
  5. Pour into juice glasses
  6. Sprinkle on cinnamon

I served it warm and it was right on the money.

Savor it! It’s delicious and healthy!

Pumpkin has tons of beat-carotene, lots of antioxidants and fiber, and moderate amounts of Vitamin C, E, calcium and iron!
